Very well known in Liège are the lacquemants, thin oval waffles filled with candy syrup. The lacquemant was created in 1903 by Liège resident Désiré de Lille. Since then, the recipe has been passed down from father to son. The scrumptious lacquemants are only eaten during the Liège Fair (5 October through 11 November).
